WINE MAKING PROCESS
The Kopke Quinta S. Luiz Vintage 2021 is produced using traditional Port winemaking methods. Grapes are destemmed and crushed before fermentation in lagares, where they undergo maceration and are hand-trodden or mechanically churned. Fermentation is conducted at controlled temperatures of 28-30°C until the desired sweetness is achieved, at which point grape brandy is added for fortification. The wine is then aged in wooden vats for two to three years before bottling. The vineyard is situated on terraces, with vines planted either horizontally or vertically up the slopes, on greywacke/schist and granite soils at elevations between 110-135 meters.
