WINE MAKING PROCESS
The production of Kuaijishan Shaoxing Yellow Wine follows a traditional 90-day winter brewing cycle starting at the 'Lidong' solar term. It utilizes high-quality polished Jiangnan glutinous rice, wheat-based 'Qu' starter, and mineral-rich water from Jianhu Lake. During peak fermentation, master brewers perform 'Kāi Pá'—manually stirring the mash with wooden hoes to regulate temperature. After pressing, the wine is sealed in traditional earthenware clay jars with lotus leaves and clay, allowing slow micro-oxygenation and maturation in the National Central Cellar.
