WINE MAKING PROCESS
The winemaking process for Immelen combines modern precision with classic Burgundian techniques. Grapes are harvested and fermented in small, separate batches using a combination of temperature-controlled stainless steel tanks and new oak barriques. Following fermentation, the wine undergoes approximately 10 months of aging sur lie (on the fine lees) with weekly bâtonnage (lees stirring). This intensive contact with the yeast cells imparts a rich, creamy texture and seamlessly integrates the oak influence, balancing the naturally high acidity of the cool-climate grapes.
