WINE MAKING PROCESS
Château Maris L'Autan 2020 is produced using grapes from vineyards managed under organic and biodynamic practices. The harvest is carried out by hand. Fermentation utilizes indigenous yeasts and occurs in a combination of custom-made wooden vats, concrete tanks, and ovoid-shaped vats. These ovoid vats are designed to facilitate natural energy flow and lees suspension. The estate is committed to sustainable winemaking, employing practices such as natural composts, cover crops, and herbal preparations. The winery itself is constructed from hemp bricks with a focus on zero carbon emissions and recyclability.
