WINE MAKING PROCESS
The 2021 L'Avion is crafted with 93% Roussanne and 7% Chardonnay. The Roussanne grapes undergo native fermentation in 100% new French Ermitage 500L puncheons, while the Chardonnay is fermented in neutral French Ermitage 500L puncheons. The wine is aged for a total of 19 months in French oak, with 60% new and 40% neutral puncheons used after blending. The vineyard practices include meticulous vine management, such as leaf pulling for sun penetration and hand-rotating grape clusters. Harvest for this vintage took place on November 8 and 9, 2021, following a moderate growing season.
