ABOUT THIS WINE
Ca' Rugate L'Eremita is a Recioto della Valpolicella DOCG, a sweet red wine from the Veneto region of Italy. The name 'L'Eremita' translates to 'the hermit,' suggesting a wine for quiet reflection. This wine is produced by Ca' Rugate, a family-owned estate with a four-generation history, committed to organic farming practices. The grapes are sourced from the producer's vineyards in the hills around Montecchia di Crosara, characterized by gravel and limestone soils. The unique winemaking process involves drying the grapes, a method that concentrates their sugars and flavors, setting this wine apart.

WINE MAKING PROCESS
The winemaking process for Ca' Rugate L'Eremita begins with hand-harvested grapes in late September. These grapes are then subjected to a prolonged drying period of 6-7 months in well-ventilated rooms, a technique known as 'appassimento.' This process concentrates the sugars, flavors, and color of the grapes. In the spring, the dried grapes are crushed, and fermentation commences using natural yeasts. The resulting must is transferred to barriques to finish fermentation. Following fermentation, the wine undergoes an aging period of 10-12 months in barriques, maturing on its lees before bottling. This method is characteristic of Recioto della Valpolicella DOCG production.
