WINE MAKING PROCESS
The 2019 L'Ermita is produced from grapes harvested between October 11th and 14th. Fermentation takes place in 1,000-liter oak vats with indigenous yeasts, utilizing 30% whole bunches. The grape varieties are co-fermented. Following fermentation, the wine undergoes aging in French oak casks for 14 months. The producer employs organic and biodynamic farming practices in the vineyard.
