ABOUT THIS WINE
Domaine Philippe Bornard is a legendary name in the natural wine movement, located in the Jura village of Pupillin. Founded in 2005 by Philippe Bornard with guidance from natural wine icon Pierre Overnoy, the estate is now run by his son, Tony. They farm high-altitude vineyards biodynamically, focusing on preserving the unique terroir of Pupillin's marl and limestone soils. L'Ivresse de Noé, meaning 'The Drunkenness of Noah,' is a rare late-harvest expression of Savagnin, crafted only in exceptional years when the grapes can wither on the vine.

WINE MAKING PROCESS
The grapes are hand-harvested exceptionally late in November, undergoing 'passerillage sur souche' where they dry and concentrate directly on the vine. After a gentle pressing, the juice ferments slowly using only indigenous yeasts in stainless steel tanks. The wine is aged for approximately two years in old 400-liter oak casks (tonneaux). Crucially, the barrels are kept topped up (ouille) to prevent oxidation, preserving the pure fruit character. The wine is bottled unfined and unfiltered, with zero or minimal sulfur additions.
