WINE MAKING PROCESS
La Araucaria Blanco 2022 is produced using grapes from centenarian Listán Blanco vines. The vineyards are farmed organically and utilize the 'cordón trenzado' vine training method. After hand-harvesting, the grapes undergo destemming and a 20-day skin maceration. Fermentation takes place in steel vats, followed by 7 months of aging on fine lees in steel. The wine is bottled with no or minimal added sulfur, without fining or filtering.
