WINE MAKING PROCESS
La Bouveau Côtes du Rhône 2023 is produced by Domaine Saint Damien using hand-harvested grapes that are de-stemmed. Fermentation occurs in large, old cement tanks with maceration periods lasting up to four weeks. For the 2023 vintage, nearly 50% whole bunch was included in the fermentation. The wine then undergoes a 10-month aging process in a combination of concrete tanks and large, old 50 hL oak foudres. It is bottled without fining or filtration. The domaine adheres to certified organic farming practices, utilizing natural methods for vine protection and fertilization.
