WINE MAKING PROCESS
For the La Comarcal Delmoro Blanco 2021, grapes are hand-harvested and pressed as whole bunches. The Merseguera undergoes fermentation with native yeasts and is aged in concrete tanks for six months. The Chardonnay component is also fermented with native yeasts but aged in used 500L oak foudres for six months on fine lees. Following this, the two varieties are blended. The wine is then lightly filtered and is not fined, reflecting a minimal intervention approach to preserve its natural character.
