ABOUT THIS WINE
Dominio de Es La Diva is a red wine from the Ribera del Duero DO, produced by Dominio de Es. The wine originates from the Soria sub-region, known for its high-altitude vineyards. It is made primarily from Tempranillo, with a small addition of Albillo Mayor. The vineyards are notable for their ancient, ungrafted vines, some over a century old, situated at elevations between 950 and 1000 meters. The soils are described as sandy and calcareous terraces with a chalk substrate. The producer, Bertrand Sourdais, founded Dominio de Es with a focus on expressing the unique terroir of Soria through meticulous viticulture and minimal intervention. La Diva is considered a 'Grand Cru' wine, reflecting the exceptional quality of its old vines and terroir, and is recognized for its elegance and minerality, offering a distinct character within the Ribera del Duero appellation.

WINE MAKING PROCESS
The winemaking process for Dominio de Es La Diva begins with a meticulous harvest of grapes in small boxes. Fermentation takes place in open wooden tanks or barrels, utilizing local yeasts. A significant feature is the long maceration period, lasting 51 to 53 days, which facilitates extensive extraction. The wine undergoes full destemming, and in some vintages, a portion of whole bunches is included. Following fermentation, the wine is aged for 18 to 20 months in used French oak barrels, with a particular emphasis on Burgundian barrels, including those previously used for Romanée Conti. The producer employs biodynamic and sustainable viticultural practices. An interesting aspect of the blend is the inclusion of a small percentage of the white Albillo grape alongside the primary Tempranillo (Tinto Fino).
