WINE MAKING PROCESS
The grapes are harvested entirely by hand, a rare practice in Muscadet. After a gentle pneumatic pressing of the whole bunches, the juice undergoes fermentation using only indigenous yeasts in temperature-controlled, glass-lined underground cement vats. The wine is then aged on its fine lees ('Sur Lie') for approximately 6 to 12 months, with regular stirrings to build mid-palate texture and complexity. It is bottled with minimal filtration and a very low addition of sulfur dioxide to preserve its natural freshness and mineral drive.
