ABOUT THIS WINE
La Pivonera 2019 is a red wine from Viñas Serranas, produced in the Sierra de Salamanca PDO. It is primarily made from Calabrés, a local clone of Garnacha, grown in a vineyard planted in 1920 at high elevation on granitic and sandy soils. The wine is a testament to the producer's commitment to revitalizing the Sierra de Salamanca region through biodynamic farming and natural winemaking techniques, focusing on indigenous grape varieties and minimal intervention to express the unique terroir. The vineyard itself is noted as one of the few remaining old, pure Calabrese sites.

WINE MAKING PROCESS
La Pivonera 2019 is produced using biodynamically farmed, hand-harvested Calabrés grapes. The winemaking process involves fermentation with indigenous yeasts and a two-week maceration with skins, with some partial skin fermentation noted. The wine undergoes low sulfur vinification and is aged for 10-12 months in used French oak barrels (300L and 500L). It is bottled unfined and unfiltered.
