WINE MAKING PROCESS
La Secrète Brut is produced using the traditional Méthode Champenoise. This involves a primary fermentation, followed by a secondary fermentation in the bottle to create the characteristic effervescence. The wine then undergoes aging on its lees, a process that contributes to its texture and complexity. Subsequent steps include riddling (remuage) to collect the lees and disgorgement (dégorgement) to remove them before final corking. The blend of six grape varieties is determined annually based on the quality and availability of grapes from the estate.
