WINE MAKING PROCESS
La Varenne de Combre 2019 is produced using 100% Chenin grapes from vines approximately 25 years old. Viticulture follows biodynamic and organic principles, with exceptionally low yields of 16 hl/ha. The grapes undergo low-pressure pressing before a 12-hour settling period. Fermentation, both alcoholic and malolactic, takes place in 500L clay amphorae and 200L egg-shaped vats. The wine is then aged for 12 months in these same vessels. The winemaking process emphasizes minimal intervention, with the wine being unfiltered and without added sulfites.
