ABOUT THIS WINE
Château Roubine is one of the oldest wine estates in France, with a history dating back to Roman times when the Julienne road crossed the property. In 1307, the estate belonged to the Order of the Templars before being ceded to the Knights Hospitaller. The name 'Roubine' translates to 'stream' or 'brook' in the ancient Provençal dialect, highlighting the natural water runoffs that cross the vineyards. Located in Lorgues, between the Verdon Gorges and the Mediterranean Sea, the estate is currently owned and managed by Valérie Rousselle, who has championed organic and biodynamic viticulture.

WINE MAKING PROCESS
The grapes are harvested mechanically at night, between 2:00 AM and 8:00 AM, to preserve freshness and prevent oxidation. Upon arrival at the winery, the fruit undergoes a pre-fermentary cold skin maceration inside pneumatic presses for two to four hours to extract delicate aromas and achieve its signature pale salmon hue. Fermentation takes place in temperature-controlled stainless steel vats at low temperatures (15°C to 18°C). Malolactic fermentation is strictly blocked to maintain crisp acidity. The wine is then aged on its fine lees in stainless steel tanks for several months to build mid-palate weight and roundness before filtration and bottling.
