ABOUT THIS WINE
Lalama is the flagship red wine from Dominio Do Bibei Slu, produced in the Ribeira Sacra appellation of Galicia, Spain. It originates from the Val do Bibei sub-region, known for its challenging 'heroic viticulture' on steep, ancient terraces. The wine is a blend dominated by Mencía, complemented by other indigenous Galician varieties like Brancellao, Mouratón, Sousón, and Garnacha Tintorera. Dominio do Bibei, founded by Javier Domínguez, is a pioneering estate focused on minimal intervention and expressing the purity of the terroir. The winery itself is a testament to this philosophy, being underground and gravity-fed. Lalama is celebrated for its elegant, fresh, and aromatic profile, offering a distinct expression of its unique, rugged origin.

WINE MAKING PROCESS
Lalama is crafted using a philosophy of minimal intervention. Grapes are hand-harvested and meticulously selected. Fermentation takes place with indigenous yeasts in open-top wooden vats and truncated cone tanks, with malolactic fermentation occurring in French oak barrels. The wine is then aged for 14 to 20 months in used French oak barrels and large foudres, followed by bottle aging before release. The winery itself is a unique, gravity-fed facility built underground, reflecting the estate's commitment to sustainability and terroir expression.
