WINE MAKING PROCESS
The production of the Langenloiser Grüner Veltliner involves a short maceration period followed by whole cluster pressing. Fermentation is spontaneous, utilizing indigenous yeasts. Approximately 70% of the wine ferments in stainless steel tanks, while the remaining 30% ferments in 2500-liter used oak barrels at temperatures between 20-22°C for one month. Following fermentation, the wine ages on its full lees until late January, then continues to age on fine lees in stainless steel tanks for an additional three months. Grapes are harvested by hand in 20 kg crates.
