WINE MAKING PROCESS
The production of Cocito Langhe Bianco Ben Turnò involves hand-picking and sorting of grapes, followed by a brief cold maceration and soft pressing. The must is fermented in stainless steel tanks at controlled temperatures (15-17°C) to maintain aromatic integrity. The wine is then aged on its fine lees for a minimum of one month, followed by 6 to 7 months of aging in stainless steel vats at low temperatures. Some aging may also occur in small barrels (500-700 liters). Bottling typically takes place in late spring.
