WINE MAKING PROCESS
The grapes for the Langhe Bianco Dragon are whole-cluster pressed and undergo fermentation in vertical vats at low temperatures for up to twelve days, with spontaneous fermentation in stainless steel also utilized. Malolactic fermentation is typically avoided to maintain freshness. The wine is then aged in stainless steel vats until the following spring. G.D. Vajra employs organic farming practices, certified as of the 2019 vintage. The producer's philosophy centers on meticulous vineyard management, creativity, and respect for tradition, aiming for wines with distinct personality.
