WINE MAKING PROCESS
The G.D. Vajra Langhe Rosso DOC is produced by vinifying each grape variety separately in vertical vats, utilizing gentle punch-downs and pump-overs. Spontaneous malolactic fermentation is employed. The wine then undergoes aging for 18-24 months, with a portion maturing in stainless steel tanks and the remainder in neutral oak barrels. G.D. Vajra is recognized for its pioneering organic and sustainable farming methods in Piedmont.
