WINE MAKING PROCESS
The winemaking process for Las Gravas begins with hand-harvested grapes. Fermentation takes place in small underground stone tanks using indigenous yeasts, with a notable proportion of whole bunches included. This is followed by foot-trodden grapes. The wine then undergoes aging for around 16 months in old oak barrels and 500-litre French oak demi-muids. The estate employs certified organic farming practices.
