WINE MAKING PROCESS
The winemaking process for Las Moradas Albillo Real begins with a manual harvest in two stages, with grapes picked at night. Whole clusters are pressed, and fermentation is initiated using indigenous yeasts. To enhance stability and allow for low sulfur doses, a hyperoxidation technique is employed. Malolactic fermentation is carried out on 30% of the wine. The wine is subsequently aged for 6 to 8 months in used French oak barrels. Battonage is performed according to the biodynamic calendar. The wine is bottled without filtering or clarifying.
