WINE MAKING PROCESS
The grapes are harvested by hand and undergo strict sorting. Winemaking follows the traditional Lapierre method: semi-carbonic maceration in old oak foudres and concrete vats without the use of sulfur dioxide or artificial yeasts. Fermentation takes place at low temperatures to preserve fresh fruit aromas. The wine is aged on its fine lees for several months before bottling. It is bottled unfiltered and unfined, with minimal or no added sulfur, preserving the raw, living character of the wine.
