WINE MAKING PROCESS
Organically farmed grapes are harvested early in the morning to preserve freshness. The fruit undergoes a brief maceration of 1 to 5 days in stainless steel tanks for gentle extraction of fruit aromas and minimal tannins. Following cool fermentation and full malolactic fermentation, the wine ages for 3 months in stainless steel prior to bottling.
