WINE MAKING PROCESS
The grapes are carefully hand-selected and harvested at peak ripeness, then laid flat on small wooden crates in a drying room (fruttaio) for several months to concentrate sugars and acidity. After pressing, the must undergoes a slow fermentation in temperature-controlled stainless steel tanks and is aged in oak barrels to add complexity and depth before bottling.
