WINE MAKING PROCESS
The winemaking process for Le Clos Blanc de Vougeot Monopole begins with hand-harvested grapes. Whole bunches are pressed, and the resulting juice undergoes a 12-hour settling period before fermentation. Fermentation occurs in barrels using ambient, wild yeasts. The 2015 vintage was notable for its extended fermentation, lasting over a year. Following fermentation, the wine is aged for approximately 16 months in barrels, with around 30% new oak, before bottling. The domaine practices rigorous organic and biodynamic viticulture.
