WINE MAKING PROCESS
The winemaking process for Le Clos des Fées involves manual harvesting with a focus on fruit and acid balance. Fermentation takes place in tanks at low temperatures using indigenous yeasts, with light settling to preserve lees for autolysis. The wine is then aged for 18 months on lees, typically in 100% new oak barrels, including demi-muids. This method aims to develop complexity and integrate the oak influence.
