WINE MAKING PROCESS
Le Contesse Prosecco Treviso Organic Brut is produced using a 'single fermentation' method, where the entire process from juice to sparkling wine takes place in a pressurized tank (autoclave). This technique, developed by founder Loris Bonotto, is designed to prevent oxygen exposure and preserve the natural aromatics and freshness of the Glera grape. The must is maintained at near-zero temperatures until winemaking begins, allowing for year-round production and consistent freshness. Grapes are sourced from organically certified vineyards within the Treviso province and are hand-picked. The wine undergoes a relatively short aging period to maintain its youthful character.
