WINE MAKING PROCESS
The grapes, Corvina and Rondinella, are vinified separately. Maceration and fermentation last for 7-8 days, with daily management of the cap using délestage and pumpovers. After racking, the wine undergoes malolactic fermentation. It is then aged in stainless steel tanks until bottling in the spring. The 2019 vintage's favorable growing conditions contributed to optimal grape maturity and concentration.
