ABOUT THIS WINE
O2Y is a highly sought-after natural wine label established in Poligny, Jura, in 2020 by three friends: Olivier Guala, Yves Roy, and Yoshinori Kuroda. Today, Olivier Guala operates the project alongside Romain Doerler, a talented young oenologist who trained under the legendary Jean-François Ganevat. The name 'Le P'tit Nico' (Little Nico) is a tribute to Nicolas Boudier, a local vigneron and close friend who has supported the micro-négociant project since its inception by sharing the harvest of his tiny, prized Villette-les-Arbois Poulsard parcel. The 2023 vintage represents an exciting evolution for the cuvée, blending Nicolas's grapes with O2Y's newly acquired estate-managed organic vines in Poligny.

WINE MAKING PROCESS
Crafted with a strict zero-zero philosophy, this wine is produced without any synthetic inputs, fining, filtration, or added sulfur dioxide (0 mg/l SO2). The grapes are hand-harvested from organic parcels featuring limestone, clay, and multi-colored marls. In the cellar, the Poulsard and Trousseau grapes undergo a slow, wild-yeast co-fermentation of whole bunches via carbonic maceration. The wine is then aged and rested naturally in neutral stainless steel or fiberglass vats to preserve its vibrant primary fruit character, high energy, and natural tension before bottling.
