ABOUT THIS WINE
Le Pas De L'Ours is a 100% Mondeuse red wine from Jean-Yves Péron, located in the Savoie region of France, classified as Vin de France. The wine is a testament to the producer's dedication to natural winemaking, utilizing grapes from very old vines (30-120+ years) cultivated on steep, high-altitude terraces (350-600m) with mica-schist soils. Péron employs organic and biodynamic farming practices, eschewing chemicals and machinery. The winemaking emphasizes minimal intervention, with spontaneous fermentation, semi-carbonic maceration, and aging in used barrels. This approach aims to capture the essence of the unique alpine terroir.

WINE MAKING PROCESS
Le Pas De L'Ours is produced using a combination of traditional and natural winemaking techniques. Grapes undergo spontaneous fermentation with native yeasts, followed by a long maceration period of approximately two months, employing semi-carbonic maceration with whole bunches and regular punch-downs. The wine is then aged for two to three years in used 500-liter barrels to allow for slow development without significant oak influence. Minimal to no sulfites are added throughout the process, reflecting a commitment to natural winemaking.
