WINE MAKING PROCESS
Le Piaole 2021 undergoes vinification in white, beginning with a cold decantation of the must. Fermentation occurs in stainless steel tanks under controlled temperatures, not exceeding 18°C, to preserve the grape's delicate aromas. Following fermentation, the wine is aged in stainless steel for three months, then rests for one month in bottle before release. The harvest is a manual process, carried out in successive passes into small crates, typically in early September.
