WINE MAKING PROCESS
The production of Bolla Le Poiane Amarone della Valpolicella begins with the appassimento method, where grapes are dried to concentrate their flavors and sugars. Natural fermentation follows, utilizing indigenous yeasts, and is completed by malolactic fermentation which occurs in both barrels and large oak vats. The wine then undergoes an extended aging period of 24 months, split between smaller French and American oak barrels and larger 7000-liter oak barrels. This process is designed to create a wine with depth and complexity, reflecting the traditions of the Valpolicella region.
