WINE MAKING PROCESS
Le Rosé d'Azur is produced using direct pressing of the grapes, followed by a two-to-three-week alcoholic fermentation in temperature-controlled concrete tanks. Malolactic fermentation is deliberately avoided to maintain freshness. The wine undergoes a light filtration before being bottled and stored in air-conditioned cellars. Aging occurs in stainless steel or concrete tanks, with no oak influence. Grapes are harvested at technical maturity, typically between sunrise and noon, as part of the estate's integrated farming practices.
