ABOUT THIS WINE
Le Temps est Bon is a joyful collaboration under the 'Summertime' project, created by Sébastien Bobinet and Émeline Calvez of Domaine Calvez-Bobinet alongside grower Bruno Richard. Sébastien, a seventh-generation Saumur vigneron, inherited old vines and a historic 17th-century limestone cellar carved deep into tuffeau cliffs. Émeline, a former professional dancer turned sommelier, joined him in 2011. Together, they champion low-intervention viticulture in the Loire Valley. The wine's name, meaning 'The Weather is Good,' is a nod to a 1970s Québécois folk song, capturing the carefree, sun-soaked spirit of outdoor summer gatherings.

WINE MAKING PROCESS
Crafted using the Méthode Ancestrale (Pétillant-Naturel), this sparkling wine is made from organically and biodynamically grown Chenin Blanc and Grolleau Gris vines averaging over 35 years of age. Spontaneous fermentation begins in stainless steel tanks using only indigenous yeasts. Before fermentation is complete, the juice is bottled under a crown cap, allowing the wild yeasts to finish their work inside the bottle and naturally trap carbon dioxide. The wine is aged sur latte and disgorged after approximately one year. It is bottled unfined, unfiltered, and with no added sulfites, achieving a pure, zero-zero natural expression.
