ABOUT THIS WINE
Le Tufaie is a premium Soave Superiore Classico produced by the historic Casa Vinicola Bolla, founded in 1883. The wine's name translates to 'tuff quarries,' paying homage to the ancient golden-colored volcanic ash quarries of Verona, which Romans used to construct historic monuments like the Teatro Romano. Sourced from the prestigious 'Castellaro' vineyard in Monteforte d'Alpone, this wine represents Bolla's pioneering work in identifying and celebrating the unique volcanic terroirs of the Soave Classico zone since the 1970s.

WINE MAKING PROCESS
The grapes, consisting of Garganega and Trebbiano di Soave, are hand-harvested in October, with a portion picked slightly overripe to enhance texture. Following destemming and soft pressing, the must undergoes a short cold maceration on the skins and static cold settling. Fermentation is conducted at cool temperatures (12–14°C) primarily in stainless steel tanks, with a small portion fermented in French oak barrels. The wine is aged on its fine lees (sur lie) with regular batonnage to build mouthfeel, blended in spring, and aged in bottle for at least two months before release.
