The Leeu Passant Chardonnay 2018 is a single-vineyard expression from Mullineux & Leeu Family Wines, located in Stellenbosch, South Africa. The grapes are sourced from the higher, loam-based slopes of Helderberg Mountain, which benefits from a maritime influence. This wine is part of the Leeu Passant brand, established in 2013 as a collaboration to showcase South Africa's winemaking heritage and diverse vineyard sites beyond the Swartland. The goal is to present a Chardonnay that challenges existing perceptions of the varietal from the region.

WINE MAKING PROCESS
The Leeu Passant Chardonnay 2018 is produced using whole bunch pressing, with the must then racked to oak barrels for fermentation. Fermentation occurs at temperatures not exceeding 24°C and lasts for approximately 36 days, with spontaneous fermentation and natural malolactic conversion noted. The wine undergoes aging for 12 months on the lees in 225L tight-grain French oak barrels, 30% of which are new. This is followed by a further 6 months of maturation in second- and third-fill barriques. Production volumes were limited to 6240 bottles and 210 magnums.
