WINE MAKING PROCESS
The De Martino Legado Semillón Sauvignon Blanc 2021 is produced through a process of separate vinification for each grape variety. Sauvignon Blanc is destemmed, pressed, and fermented with native yeasts in stainless steel tanks at controlled temperatures, with protection from oxidation, followed by three months of aging. Semillón grapes are whole-cluster pressed without oxidation protection and fermented in old, neutral oak barrels with native yeasts, undergoing partial malolactic fermentation and oxidative aging for three months. The final blend is aged for six months in neutral old oak barrels and then lightly filtered before bottling.
