WINE MAKING PROCESS
The grapes are harvested at optimal aromatic ripeness and undergo cold maceration (skin contact) to extract the maximum primary aromatics from the skins. Fermentation takes place in temperature-controlled stainless steel tanks at low temperatures to preserve the delicate floral and fruit esters. The fermentation is stopped by chilling the must before all sugars are converted to alcohol, naturally retaining the residual sugar that defines its off-dry style.
