WINE MAKING PROCESS
The Léon Chardonnay Arbois 2022 is produced using 100% Chardonnay grapes. The winemaking process begins with gentle pressing of the grapes, followed by fermentation at low temperatures to preserve freshness. Alcoholic and malolactic fermentation occur in a 3,000-liter foudre. The wine is then aged, primarily in stainless steel tanks to maintain fruitiness and purity, with some indications of aging in neutral oak barrels. Minimal intervention is a key aspect, with native yeasts used and limited sulfur additions. The grapes are generally harvested at the end of September.
