ABOUT THIS WINE
Les Bournais is a 100% Chenin Blanc from Domaine François Chidaine in the Montlouis-sur-Loire appellation of the Loire Valley. The wine originates from a north-facing vineyard planted in 1999 by François Chidaine on a limestone plateau. This specific plot, considered a 'magical place' by the winemaker, features a soil composition of clay and limestone with a chalky tuffeau limestone bedrock, which differs from the more typical clay and silex soils found in Montlouis. This terroir contributes to a wine profile that can be reminiscent of wines from the neighboring Vouvray appellation. François Chidaine is recognized for his deep commitment to organic and biodynamic farming practices, which he has implemented since the early 1990s and 1999 respectively. His winemaking philosophy emphasizes minimal intervention, allowing the natural expression of the grape and its terroir.

WINE MAKING PROCESS
The winemaking process for Les Bournais begins with a manual harvest and successive sorting of the grapes. Fermentation occurs naturally with indigenous yeasts in 600-liter demi-muids, a process that can last up to six months. Malolactic fermentation is not sought. Following fermentation, the wine undergoes an aging period of 10 to 11 months in demi-muids, during which it rests on its fine lees. This technique contributes to the wine's texture and complexity. Domaine François Chidaine is committed to organic and biodynamic viticulture, employing regenerative, no-till agriculture with permanent cover crops.
