WINE MAKING PROCESS
The winemaking process for Les Canadells begins with grapes harvested in late August, which are then cooled before direct pressing. Fermentation takes place in stainless steel tanks at low temperatures, with regular stirring of the lees. Approximately 30% of the cuvée is fermented in oak barrels. Following fermentation, the wine is aged for a few months in either stainless steel tanks or demi-muids. The estate practices traditional viticulture, avoiding herbicides and utilizing horse-drawn plows in some areas.
