WINE MAKING PROCESS
The winemaking process for Les Eres Vinyes Velles begins with hand-harvested grapes. A cold maceration for three days at 10°C is followed by alcoholic fermentation in fiber tanks, with temperatures controlled below 28°C, for a total maceration of 20 days. Malolactic fermentation is completed in vats. The wine is then aged for 18 months in new French oak barrels, composed of Allier, Tronçais, and Bertranges oak with varying toast levels. Production for the 2017 vintage was 4,100 bottles and 200 magnums.
