WINE MAKING PROCESS
Les Exaltés Macvin du Jura is produced using the traditional 'vin de liqueur' method. Unfermented or partially fermented grape must is fortified with aged grape spirit (Marc) from the estate, halting fermentation and preserving natural sweetness. The Marc used for fortification is aged for at least two years in oak barrels. The resulting Macvin is then also aged in oak barrels. This specific bottling is a non-vintage blend, combining Macvin from different years to achieve a harmonious profile. Domaine Labet employs organic and biodynamic farming practices in its vineyards, which are managed parcel by parcel.
