WINE MAKING PROCESS
Les Fuseaux is produced using an 'infusion style' vinification. This involves macerating 70% of destemmed grapes for a week in the juice of the remaining 30% of directly pressed grapes. Fermentation is carried out using indigenous yeasts. The wine is then aged in stainless steel vats. It is intentionally unfined and unfiltered, with no sulfur dioxide added throughout the process. Grapes are destemmed using a traditional sieve and pressed with an early 20th-century Marmonier vertical ratchet press.
