WINE MAKING PROCESS
Les Hauts de Coulaine is produced using grapes from old Chenin Blanc vines. The winemaking process involves fermentation with indigenous yeasts, taking place in both barrels and stainless steel tanks. Following fermentation, the wine undergoes 12 months of aging, with 50% in barrels and 50% in stainless steel. Minimal sulfur dioxide is used throughout the process. The grapes are hand-harvested.
