Established in 1985 by Eddy and Mileine Oosterlinck-Bracke, the estate has been farmed organically since 1994 and biodynamically since 2007, reflecting a philosophy of respecting nature and terroir. The 'Les Monts' cuvée is cultivated on soils composed of sandstone schists and volcanic rocks. WINE MAKING PROCESS
The winemaking process for Domaine de Juchepie Les Monts begins with hand-harvested Chenin Blanc grapes. These are then subjected to an extended manual pressing, which can take over 24 hours, to extract maximum concentration. Fermentation is spontaneous, relying on native yeasts without the addition of sugar or cultured yeasts. The wine is subsequently aged for 12 months in used oak barrels (2-5 years old) and then kept on its fine lees.
