WINE MAKING PROCESS
The winemaking for Les Pentes Sèches is characterized by extreme care and minimal intervention. Grapes are hand-harvested and sorted, followed by a gentle 'Champagne pressing'. Spontaneous fermentation with indigenous yeasts occurs in old Burgundy barrels, with complete malolactic fermentation. The wine then ages for nine months on its fine lees, unfiltered and unfined, with minimal sulfur additions. This process is designed to capture the essence of the 'dry slopes' terroir and produce a wine of purity, tension, and profound minerality.
